Do you mean change the actual date, or change the format of the date?
If you're changing the actual date, and it would have to be changing to ALL the same date, type in the date you want on the first cell. Then copy, you should see the moving dotted line around the cell. If you don't, go the the cell before and TAB to the cell you just put the new date in and copy. Now go to the 2nd cell. Hold your shift key and arrow down to the last cell you want to put that date in. Hit "Enter". That should place the date you copied in every one of those cells.
If it's just the format of the date you're changing, highlight all the cells in the column or row you are changing the format of. Then go to Format - Cells. Choose Date, then on the right choose the style of date you want. That will change them all. If you think you're going to be adding additional dates, when you highlight, either choose the whole column, or just highlight down further.
